FOOD SAFETY AND HACCP TRAINING COURSES IN MANUFACTURING

Level 1 Award in Food Safety for Manufacturing

This qualification focuses on the importance of food safety in the processing and manufacturing industry. It is suitable for those engaged in both high and low-risk food production. Before commencing employment in a food processing or manufacturing environment, staff must be trained to identify the particular hazards associated with bulk food production, and the control systems used to prevent food contamination. The content of the course includes: an introduction to the causes of food poisoning (with an emphasis on the unique hazards and controls associated with food processing and manufacturing), personal hygiene, cleaning methods, temperature control, storage and stock rotation, waste management, pest prevention and eradication.

After successfully achieving this qualification, candidates will be equipped with the necessary basic knowledge required to commence employment in a bulk food processing and manufacturing environment.

This course is an essential introduction for anyone employed in a food processing or manufacturing environment, including: production workers, cleaning and maintenance teams, warehouse staff, delivery drivers, administration and sales support staff.

Duration of course: 3 hours plus a 30 minute (multiple choice) examination. 

Level 2 Award in Food Safety for Manufacturing

Food handlers achieving this accredited qualification will have the necessary knowledge to ensure food safety in any size or type of food manufacturing environment.

The qualification is designed for people who work, or intend to work in food or drink production. In addition to the fundamentals of food safety, candidates will gain an appreciation of the specific types of hazards, controls and monitoring associated with food manufacture.

This qualification has been designed to address the distinct differences between catering and food manufacturing environments,

It is an essential qualification for those employed as supervisors and managers in food or drink manufacturing.

This qualification has the full support from Improve, the Sector Skills Council for the food and drink manufacturing industry in the UK. It is therefore fully compliant with industry and regulatory standards, as well as being recognised by environmental health practitioners, auditors and third party customers who require the manufacturer to demonstrate that they have trained staff to a recognised level.

Level 3 Award in Supervising Food Safety in Manufacturing (QCF)

The aim of this accredited qualification is to build upon the knowledge gained by those who have completed the Level 2 Award.

The course is intended principally for those who are already operating in, or aspiring to, a supervisory role within a food manufacturing business. The Level 3 Award is achieved by those who can demonstrate a wide knowledge of food safety legislation and effective supervision. They will also be able to take responsibility for the competency of the workforce and for identifying hazards, implementing and monitoring controls, and taking appropriate corrective action when necessary.

This qualification provides candidates with a range of food safety supervisory skills which are relevant to a food manufacturing business.

This qualification is fully compliant with industry and regulatory standards as well as being widely recognised by environmental health practitioners, auditors and other enforcement officers.

Duration of course: 3 days

Level 4 Award in Food Safety Management for Manufacturing

The food manufacturing environment demands many stringent safety controls to be in place, with traceability of product being of paramount importance.

The sound theoretical knowledge gained by an individual successfully completing this course will ensure the confident management necessary in any food processing or manufacturing business, from ingredient intake to final product despatch.

Duration of course: 5 days 

Level 2 Award for HACCP for Manufacturing

This qualification will allow individuals to understand the importance of implementing a food safety management system, based on the Codex HACCP principles, in a Food Manufacturing environment. They will learn their role in ensuring the effective operation of the HACCP system and gain the knowledge to identify, control and monitor hazards at points critical to food safety within their business. They will also understand the importance of taking corrective action when critical limits are breached and become familiar with the documentation and records needed to support a HACCP system.

Level 3 Award for HACCP for Food Manufacturing

This regulated qualification expands on the fundamentals of the Level 2 Award in HACCP in Manufacturing.

Regulation (EC) No 852/2004 requires that ‘those responsible for the development and maintenance of the HACCP principles have received adequate training in the application of the HACCP principles’. In order for employees to deal competently and confidently with this requirement, a thorough understanding of Codex HACCP principles is needed.

Those achieving this qualification will understand how the 12 Codex steps to HACCP contribute to safe food production. They will learn:

how to identify, control and monitor significant hazards at points which are critical to food safety; the appropriate corrective action to take when critical limits are breached; the type of documentation and records required; an understanding of the need to review the HACCP system at appropriate times.

This qualification is fully compliant with industry and regulatory standards, as well as being recognised by environmental health practitioners, auditors and other enforcement officers. Individuals achieving this qualification will understand the importance of adapting HACCP principles for product-based and process-led situations.

Level 4 Award in HACCP for Food Manufacturing

Level 4 HACCP qualifications are aimed at learners either at, or working towards, a management level in a manufacturing business. Achievement of either of these qualifications will enable learners to understand the importance of implementing a food safety management system, based on the Codex HACCP principles, and give learners the skills to evaluate HACCP plans critically.
It is highly recommended that individuals have already completed a Level 4 Award in Food Safety, or the equivalent, and/or a Level 3 HACCP qualification before attending this course.

These qualifications are useful for auditors, enforcement officers and other food safety professionals.
